It wouldn’t be summer without a Strawberry Cupcake recipe, right? I’ve been wanting to share my recipe for Strawberry Lemon Cupcakes for a while now. They are too good to keep to myself and with all of us hanging on to summer for dear life, these are so fun to whip up on a hot day! Okay, any day really.
This is a really easy Strawberry Cupcake recipe. I use my favorite Boxed Cake Mix when I’m in a hurry.
Strawberry Cream Cheese Frosting Recipe
2 sticks of unsalted butter (room temp)
2 packages of cream cheese (room temp)
2 tsp vanilla
6 cups confectioners sugar (powdered sugar)
1/3- 1/2 c strawberry preserves (to taste)
Cream the butter and cream cheese together. Add vanilla. Add powdered sugar 1 -2 cups at a time. Once blended and creamed, add strawberry preserves.
Then chill in fridge for about 30 minutes before frosting your cooled cupcakes
Easy Lemon Curd Filling Recipe
1 c granulated sugar
1 stick unsalted butter (melted)
zest from 3 lemons
1 cup lemon juice
Whisk sugar & eggs until creamy. Add melted butter, lemon zest and lemon juice. Mix well. Melt in the microwave 1 minute at a time, stirring in between. Continue melting 1 minute at a time until mixture is thick enough to coat the back of a spoon. Then cover with plastic wrap, laying the wrap right up against the curd so that no air is in the bowl at all. Completely sealing it off. Refridgerate for
